The flavor is sweet and floral, with a texture that is perfectly balanced. Asian sweet potatoes are known to be dense and dry in texture; this variety has a perfect creamy/dry texture. From topping pizzas to serving whole roasted as a snack at street markets, the sweet potato is ever-present in Korean cuisine, and much beloved. It is perfect for making goguma mattang, a Korean side dish where the sweet potato is caramelized. It is also an excellent general-purpose sweet potato for making your favorite muffins and breads or eating straight up.
