This heirloom variety is highly valued for its striking, deep burgundy to blood-red foliage, which is excellent as sweet, crisp baby greens or microgreens, ready for harvest in about 35 days. The antioxidant-rich leaves can grow quite large, complementing the equally delicious, small, sweet, and earthy red roots, which mature in approximately 50 days. These tender roots often display subtle concentric rings and are best harvested young for culinary use in salads or cooked dishes.
