The lightly bitter flavor and exceptional nutritional value of African White eggplant make it a must for soups, stews, and stir fries, and the immature fruit can be eaten raw. Its history in Africa can be traced back more than 500 years. Prolific and easy to grow, the plant can reach 3 to 5 feet tall.
