The flat-round bulbs are at their tastiest when they reach 2–3 inches across and are renowned for their sweet, mild flavor, like a tender cabbage with the crunch of a water chestnut. Bred by the Hild Seed Company of Germany, this open-pollinated variety is fast growing, slow to bolt, and perfectly suited for cool-season harvests in spring and fall.
