A newly selected open-pollinated hot pepper, with about the heat level of a mild habanero. Chili head and home pepper breeder Noe Hernandez was born and raised in Mexico, where his pepper palate was honed and his passion for creating the perfect hot sauce was ignited. Noe has worked for over seven years to select just the right heat level by crossing the classic, thick-walled jalapeño with the flavorful, yet searing hot ghost pepper. After much tweaking and testing, he perfected Palmetto as a balanced and flavorful pepper for making the best hot sauce we have ever eaten! Beyond making hot sauce, try dehydrating this pepper for flakes or use it for pickled peppers or salsa.
