Pasilla Bajio

Known as "little raisin" for its dried form, this mildly hot pepper is essential for authentic mole sauce.

About Pasilla Bajio

This mildly hot pepper, typically 1,000-2,000 Scoville, measures about 7 by 1 inches and is known for its smoky, sweet flavor. It transforms from dark green to a wrinkled, deep brown when dried, which is reflected in its Spanish name meaning "little raisin." Producing abundant yields in approximately 85 days from transplant, this plant also offers resistance to tobacco mosaic virus. Fresh peppers are excellent in salsas and enchilada sauces, while the dried form is a cornerstone for traditional mole and other smoky dishes.
