This early-maturing pepper variety produces small, thin-skinned fruits that are mostly mild when green, but occasionally deliver an unpredictable burst of heat, creating a culinary "roulette." As they ripen to red, their pungency generally increases, with heat levels typically ranging from 500 to 2,500 Scoville units. These bite-sized peppers are traditionally sautéed in olive oil and finished with sea salt, and are also well-suited for pickling.
