Poblano (Ancho) Peppers

Peppers
Poblano (Ancho)

A versatile pepper known for its mild heat and thick walls, popular fresh for stuffing and dried for chili powder.

About Poblano (Ancho)

This pepper variety yields extra-large, thick-walled fruits, generally 3-6 inches long, featuring a heart shape, wrinkled skin, and a blunt-tapered point. Ripening from dark green to a rich reddish-brown, these peppers are known as Poblano when fresh and often called Ancho when dried. They develop a mildly hot (1,000-2,000 Scoville Heat Units), mellow, and aromatic flavor that becomes sweeter and more complex with maturity. These versatile peppers are excellent for fresh culinary uses like stuffing and roasting, and are highly valued dried for grinding into chili powder and enriching sauces.
