This daikon radish develops long, crisp roots with a light, subtly spicy flavor. Young roots are ideal for shredding into sushi or salads, while mature roots contribute a satisfying crunch to stir-fries and soups, or can be pickled. Thriving as a winter radish, it requires cool temperatures and shortening day lengths, making late summer or fall the optimal planting time. Its deep-penetrating roots also effectively break up heavy soils when used as a cover crop, and harvested roots store very well.
