Parsley Root
Petroselinum crispum var. tuberosum
Parlsey root is a variety of parsley grown for its large taproot, rather than its leaves (although its leaves are edible too). It belongs to the carrot family, along with fennel, celery, cilantro, and parsnip. Unlike parsnip though, parsley root is not sweet and tastes more like a combination of parsley, celery, and carrot.

Growing from Seed
For better germination, you can soak the seeds overnight. Plant the seeds in moist, rich soil about 6 to 8 inches apart. To ensure the best growth, the soil should be around 70ºF.
Harvesting
Look for firm, uniformly-sized roots that are a pale beige.
Storage
Eat the leaves right away. The roots can be stored just like carrots.
